Ingredients

Spinach, fresh, 2 cup
Mushrooms, fresh, 1 cup, pieces or slices
Zucchini, 2 cup, sliced
Canned Tomatoes, 1 cup
Tomato Paste, 0.13 cup
Onions, raw, 0.5 cup, chopped
*Brown Rice, long grain, 1 cup
Olive Oil, 4 tbsp
6 green peppers whole (for stuffing)
Directions
heat oil and sautee onions and zucchini for 10 minutes on med low heat. add other veggies and sauce and salt and pepper. Sautee until tender and if you have added any additional sauce until it is reduced by half.
Stuff peppers and place in baking dish. Fill one-third the way up with water. Bake in 350 oven covered with foil for 30 minutes. Remove foil and bake an additional 15-30 minutes or until the green peppers are tender and the filling is starting to form a crust.
