Introduction
This is cobbled together from two different on-line recipes. I added the flax. I didn't have four eggs so it was made with three eggs instead. Used some suggestions to replace white sugar with brown and used apple sauce for half the oil, as seen here on SP. If you have pre-mixed pumpkin pie spice you can use 3 1/2 tsp of that. Ingredients

1 cup sugar
2 cups brown sugar (I used "golden")
1/2 cup oil
1 cup of apple sauce (2 x 113 g snack packs portions)
2 cans (398 ml) pumpkin
3 eggs
1/2 cup flax seed
2 tbsp water (added enough water to the flax to get to 2/3 cup and microwaved mix of water and flax for 1 minute to soften the seeds, 2 tbsp is just a guess)
2 tbsp honey
3 1/2 cups flour
1 tsp baking powder
2 tsp baking soda
2 tsp salt
1 tsp cinnamon
1 tsp allspice
1/2 tsp nutmeg
1/2 tsp ginger
1/2 tsp cloves
2/3 cups water
1 1/2 cup raisins
1 cup nuts (walnut and/or pecan) (optional)
Directions
Mix oil& sugar. Add apple sauce, eggs, flax & pumpkin. Sift all dry ingredients& add alternately with water to pumpkin, mixing well. Stir in raisins and nuts.
Pour into greased muffin tins or use baking cups & bake at 350 degrees for 30 minutes. I ran out of muffin tins at 24 so I put the rest in a small loaf pan and that worked out alright too although I cooked it an additional ten minutes. It wasn't very deep so perhaps check it with a toothpick to ensure it is well cooked after the 40 minutes.
Leave the nuts out if you're sending the muffins to school with your children. I just made one muffin tray without nuts and then added nuts to the remaining batter. Use different coloured paper muffin cups to help you remember which is which.
