Ingredients
-
2 whole chicken breasts, bone & skin removed, diced
1 cup chopped green bell pepper , about 1 large pepper
3 slices pepper jack cheese
1 pkg (1oz) taco seasoning mix
3 medium whole wheat tortillas
1.5 cups salsa separated
garlic salt to taste
ground black pepper to taste
Directions
-Preheat oven to 350 degrees
-Dice chicken. Season with garlic salt and ground black pepper to taste. Brown over medium heat until chicken pieces are almost cooked through.
-Add chopped green pepper and mix in entire package of taco seasoning mix. Continue cooking over medium heat until chicken is cooked through and pepper is crisp tender.
-In a 9 inch pie plate, place one tortilla on the bottom. Spread 1/3 of the cooked chicken pieces & pepper over the tortilla. Top this with 1/2 cup of the salsa.
-Repeat 2 more times until all tortillas, chicken, peppers, and salsa are used. Ending up with the last 1/2 of salsa on the very top.
-Top this with the 3 slices of pepper jack cheese.
-Bake at 350 for 10 - 15 minutes, or until cheese is completely melted and the rest is heated through.
-Let cool for a couple of minutes. Serve and enjoy!
