Soft, Cracked, sugar coated Soft, Cracked, sugar coated
Number of Servings: 147

Ingredients

    5 Cups Flour
    2 Tsp Baking Soda
    1 TBSP Ground Ginger
    1/2 Tsp Ground Cinnamon
    1/2 Tsp Ground Cloves
    3/4 Cup Canola Oil (or 1 cup Butter)
    2 Cups Sugar
    2 Eggs Beaten
    1/2 Cup Molasses
    2 Tsp Fresh Lemon Juice

Directions

Makes approx. 12 dozen Cookies. Preheat oven to 325F.

Sift together Flour, Baking Soda and Spices.

Cream together Oil (or Butter) and 2 Cups of Sugar.

Stir in beaten Eggs, Molasses and Lemon Juice.

Add Flour mixture to Sugar mixture and blend thoroughly. Shape dough into 3/4" balls. Roll in remaining sugar and place 2" apart on greased cookie sheets. Bake for 12 minutes until just firm to the touch. Cool on wire rack.

    these were yummy- I subbed 1/2 c. applesauce for the oil and used 1 1/2 c. Splenda and 1/2 c. white sugar.
