Ingredients

    1 1/2 cup Splenda
    1 Egg
    3 Ripe Bananas
    1/2 cup light butter
    1 tsp vanilla extract
    1/4 Tbsp Baking Powder
    1/2 Tbsp Baking Soda
    1 cup all-purpose flour
    1/2 cup wheat flour
    2 Tbsp Flax seed
    2 Tbsp Wheat Germ
    1/4 cup milk with 1 tsp of distilled vinegar added to it
    Blend the first 4 ingredients until creamy. It won't blend smooth. Shift the dry ingredients together in a separate bowl then add them to the splenda mixture. While blending add the most important part - the milk with vinegar. Make sure you add the vinegar to the milk b/f you add it to the rest of the mixture!!! You can use sour milk instead, but I never keep it on hand.
    Bake in muffin tins @ 375* for approx 25 min.
    1 hour for a loaf pan.
    Check on them when toothpick comes out clean they are done.
    My husband loves these and he hates 'health food'!

Makes 12 muffins or two loaves.
