Ingredients

    3 tbsp olive oil
    1 large onion chopped
    3 garlic cloves chopped
    1 large eggplant peeled and cubed
    4 zucchini cubed
    3 14.11oz can diced tomatoes
    1 6oz can tomato paste

Directions

In a large pot heat oil and onion and cook for 5 to 10 min. add garlic cook for 1 min. more. add cubed eggplant and zucchini along with tomatoes and paste. simmer for 45 min.
