Ingredients

    1 whole chicken breast, grilled and chilled
    2 small (4-inch) stalks of celery, finely chopped
    1/2 slice of purple onion, finely chopped
    Kernels sliced from one small ear of cooked corn on the cob
    1 Tbsp. Kraft Light Miracle Whip Salad Dressing
    1 tsp. Dijon Mustard
    2 cups fresh spinach leaves

Directions

Cut chicken breast into small cubes. In a medium bowl, toss chicken cubes with celery, onion and corn. Stir in Miracle Whip and Dijon. Serve over a bed of fresh spinach. Optional ingredients are pecans, raisins, fresh grapes or chopped fresh apple.

    My friends and I had a Mardi Gras night, and with all the prawns, jambalaya and rice, I'm was thrilled to find a delicious salad that fit in with the menu. It was really easy to make, and my friends loved it! - 8/8/10
