Ingredients

1 C. whole wheat flour
1/4 C. flour
1/4 C. brown sugar, packed
1/4 C. splenda
1 tsp cinnamon
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1 Tbs. applesauce
1 large egg (beaten)
2 large egg whites (beaten)
3-4 medium bananas (mashed)
1 C. dry oatmeal
3/4 C chopped walnuts (optional)
1/4 C. Raisins (optional)
Directions
Preheat oven to 350 degrees F. Stir together dry ingredients. Add oil and eggs and mix thoroughly. Add mashed bananas and oatmeal and mix well. Fold in walnuts. Pour batter into 12 muffin tins and bake until the top is golden and firm to touch, 35-40mins. remove and cool on wire rack. Makes 12 mini bread loaves or muffins.
