Ingredients

3 cups cooked and chilled quinoa
One can of black beans
4 oz light feta cheese
3 cloves garlic, crushed
1 large tomato, seeded and chopped
1/2 cup thinnly sliced or minced red or green onion
1 cup seeded and chopped cucumber
Directions
Use cold/refrigerated quinoa. Rinse black beans. Crumble feta. Chop tomato. Toss all ingredients together. May be used as a side dish or main dish for lunch. Enjoy.
