Ingredients

2 cups chopped asparagus
1/2 cup chopped onion
2 Tbsp flour
1 15oz can salmon, bones removed
3/4 cup shredded swiss cheese, divided
1/2 cup reduced fat shredded cheddar or colby cheese
1/4 tsp red pepper flakes
3 whole eggs
4 egg whites
1 cup milk
Directions
In a small skillet, saute onion with cooking spray. Combine salmon, onion and flour in a bowl. Add 1/2 cup swiss and the cheddar or colby cheese and red pepper flakes. Mix together. In a separate bowl mix eggs, egg whites and milk. Wash asparagus, remove tough ends, and chop into 1 inch pieces.
Spray a 9" pie plate with cooking spray. Place the chopped asparagus in the bottom of the pie plate to act as a crust. Put the salmon mixture on top of the asparagus. Pour egg mixture on top of salmon mixture. Poke with a fork to allow the egg mixture to flow to the bottom of the pie plate and mix with the salmon. Sprinkle the top with the remaining 1/4 cup of swiss cheese. Bake at 350 for 40 minutes or until center is done. Makes 6 servings.
