    i egg beaten
    1/8 cup water
    1 medium eggplant...1/4" slices ( I used about 460 grams or 1/2 large eggplant)
    1 pkg. shake and bake (barbeque or other)
    1 cup spaghetti sauce(meatless for lower calories)
    low fat mozzarrella cheese slices-4
    2 Tbs. parmesan cheese


Beat egg and water. Dip slices in egg then dredge with shake and bake. Coat a fry pan with spray cooking oil then fry pieces until golden brown.

Place 1/2 of sauce in bottom of a baking dish, add eggplant and mozzarella slices then add remaining spaghetti sauce. top with Parmessan.Bake in oven for about 20 350
