Introduction

Ingredients

1 cup warm water
1 tablespoon non-fat milk
2 tablespoons extra virgin olive oil
2 tablespoons honey
2 tablespoons brown sugar
1 teaspoon salt
1.5 cups all-purpose white flour
1.5 cups whole wheat flour
2 teaspoons instant active dry yeast
Directions
1. Combine first 6 ingredients in a large bowl and stir.
2. Add flours and yeast and knead until dough is smooth. (I put in my Kitchen Aid mixer for about 15 minutes)
3. Place dough in a greased bowl, turning once to grease top. Cover with saran wrap and let rise until doubled, about 40 minutes. (I heat the oven to 170 degrees, then turn oven off and let the dough raise inside.)
4. Punch dough down, knead for a few minutes (5 minutes in the kitchen aid mixer) and form into a loaf. Place in a greased loaf pan and cover. Let rise until doubled, about 30 minutes(In the oven as before, remember to turn oven off)
5. Preheat oven to 350 degrees. Bake loaf 35 minutes.
6. Removve from oven, let cool in pan about 5 minumtes before placing the loaf on a rack to complete cooling.
