Number of Servings: 4

Ingredients

    1 lb flank steak, pounded thin (approximately 1/4")
    2 cloves garlic, minced
    4 Tbsp Boursin cheese
    12 pieces roasted red peppers
    1 cup baby spinach

Directions

Preheat grill to high. Pound both sides of steak thoroughly until approximately 1/4" uniform thickness. Lay steak flat. Spread garlic and cheese evenly across steak leaving 2" at top. Top with spinach and roasted red peppers. Roll steak up tightly, tucking in the filling as you go. Rub outside of steak with salt and pepper if desired. Secure with approximately 8 skewers spaced 1 1/2-2" apart. Slice into equal portions. Grill pinwheels 3-4 minutes per side or until desired doneness turning with spatula to prevent filling from falling out. Let rest 5 minutes before serving. Serves 4.
