Creamy mashed potatoes which taste decadent and have minimal prep time.
Using buttermilk gives the flavor of sour cream without the extra fat and calories.
Using a potato ricer (it is like a very big garlic press) removes potato peeling from the process.

Ingredients

    4 lbs Idaho Potatoes (any russet/starchy potato will do)
    1 cup lowfat buttermilk

Directions

1. Wash the dirt off the potatoes
2. Place in a single layer of a large stock pot
3. Cover with cold water and bring to a boil on high heat.
4. After potatoes come to a boil, reduce the heat and simmer for 20 minutes.
5. When a fork inserts easily, drain the potatoes.
6. Cut the potatoes in half
7. Push each half though a potato ricer and discard skins
8. Pour in buttermilk and stir to combine.

Makes 8 1-cup servings.
