Ingredients

    2 to 3 cups cabbage chopped
    2 cups cauliflower chopped
    12 fl oz V-8 juice
    3 strips celery (4 inches long) finely minced
    1 can diced tomatoes (14 oz can)
    1 can Rotel diced tomatoe and green chilis, Mild (10 oz)
    1 box clover calley beef broth (32 oz)
    1 small onion
    1 tsp parsley

Directions

Combine all ingredients, bring to a rapid boil, lower heat cover and simmer until cabbage and cauiliflower is tender, about 2 hours.
makes about 8 2-cup servings.
