Introduction

This is my favorite recipe my mom and I came up with it together we had a lot of fun that day. I this recipe because it was a very good way to sneak in spinach. Ingredients

    1 9” pastry piecrust
    1 ½ cups egg substitute
    1 cup shredded 2% white cheese
    ¾ cup of fat free sour cream
    8 pieces lower sodium turkey bacon crumbled
    ½ cup shredded 2% sharp cheddar
    ½ cup chopped spinach (fresh)
    1 package onion soup mix
    1/8 tsp cayenne pepper
    ¼ tsp black pepper

Directions

Directions: Preheat Oven to 425°

Whip eggs, sour cream, black pepper, cayenne and soup. Spread cheese ham and spinach in the bottom of the piecrust. Pour egg mixture into the pie crust. Put sharp cheddar on the top of mixture. Cook for 15 minutes at 425°. Reduce heat to 300° and cook for 40 minutes. Remove from oven let set for 10 minutes.

*I would recommend Swiss or Monterey Jack for white cheese. Fresh spinach works best for this recipe. If you want to use ham instead add ¼ tsp of salt.
