Ingredients

1/4 cup frozenchopped spinach
1/4 cup finely chopped mushrooms
1/3 cup fat free rocotta cheese
2 tsp Parmesan cheese
1 tsp chopped garlic
dash nutmeg
dash salt and pepper
2 raw boneless skinless chiken breast cutlets
3/4 cup canned crushed tomatoes
1 tsp dried minced onion
1 tsp dried Italian seasoning
1 stick string cheese
Directions
Makes 2 servings (can be doubled, tripled etc)
Preheat oven to 350 degrees
Place spinach and mushrooms in microwave bowl and microwave for 1 minute until soft. Blot, removing excess liquid. Add ricotta cheese, Parmesan, 1/2 tsp garlic, nutmeg, salt and pepper. Mix and set aside.
Place chicken breast cutlet in large sealable plastic bag and carefully pound with a meat mallet until 1/3 inch thick. Repeat with all cutlets (could use a regular chicken breast-just pound thin)
Lay out chicken one at a time and spread evenly the veggie-cheese mixture. Roll up and secure with a toothpick.
Place in a baking pan sprayed with non-stick spray. Cover with foil. Bale 20 minutes
Combine tomatoes, onion, 1/2 tsp Italian seasoning.Set aside. Grate string cheese.
After 20 minutes remove chicken from oven, remove foil, Spoon tomato mixture and sprinkle with string cheese. Return to oven uncovered for 15 minutes or until chicken is done.
