Introduction

I get a box of organic vegetables every week, and this week I got fresh fava beans. In a pod. I didn't want them to go to waste, so I hunted down some recipes. Ingredients

    1 c. fava beans
    juice from one lemon
    1 tbsp. olive oil
    salt
    pepper
    1 clove garlic, minced

Directions

Boil the fava beans in salted water until tender (approx. 10 minutes).

Drain and cover with cold water. Peel the skin from the fava beans.

Combine beans with the rest of the ingredients in a food processor and pulse until smooth. Add salt and pepper to taste.

Serve on crackers, crostini, or with vegetables.
