Introduction

These muffins smell SO good while cooking! I found this recipe on recipezaar.com while looking for healthy options for my very picky toddler's cold lunches at day care. Ingredients

    1 cup quick oats
    1 cup milk
    3/4 cup + 2 tbls applesauce
    1/2 cup brown sugar
    1 egg
    2 tbsp oil
    1 tsp vanilla
    1/2 cup all purpose flour
    1/2 cup whole wheat flour
    2 tsp baking powder
    3/4 tsp cinnamon
    1/4 tsp nutmeg


Directions

Makes 12 muffins

Toast oatmeal in dry frying pan till brown
Transfer oatmeal to a large bowl, add milk, let sit for 30 min
Add applesauce, brown sugar, egg, oil, and vanilla to oats, stir till combined
Add dry ingredients* and stir till JUST combined
Fold in blueberries
Spoon into muffin tin
Bake at 350 for 27-35 minutes
Cool for 10 minutes before transferring to wire rack
* original recipe also called for 1/2 tsp salt, which I forgot to add, and mine came out delicious regardless
