Introduction
This is a pasta version of my favorite salad, Greek Salad. Add sliced cucumber as a side dish for the full effect! Whole wheat pasta gives it a great fiber boost. Ingredients

Ronzoni, Whole Wheat Penne Rigate, 8 oz
Ripe Tomatoes, roughly chopped, 200 grams
Olive Oil, 1 tbsp
Garlic, 5 cloves
Feta Cheese, 4 oz
Onions, raw, sliced, 200 grams
Black Olives, chopped, 50 grams
1 tsp dried oregano
Directions
Place pasta in boiling water and cook according to instructions.
While pasta is cooking, heat olive oil in non-stick pan and saute garlic and onions until translucent and beginning to carmelize. About 8 minutes. Season with salt and pepper.
Add tomatoes and oregano and cook until tomatoes are very soft. About 5 minutes. Season with salt and pepper.
Add black olives and continue cooking about 2 minutes.
Drain pasta and add to mixture. Stir to combine. Add feta and combine. It takes a bit of stirring to really get all the ingredients to blend together and the feta to begin to melt.
Makes four yummy, very filling servings.
