Ingredients

Medium yellow potato, raw, in skin
Pat unsalted butter
Grated monterey jack cheese (1 cup or to taste)
A few leaves basil
1-3 cloves garlic (to taste)
1/3 cup milk (to taste)
Garlic press
Eating fork
Small kitchen knife
Microwave safe bowl
Microwave
Directions
Stab potato with a fork several times, place in a microwave-safe eating bowl, and microwave 6-8 minutes (depending on your microwave; may be less for some high-powered units) until potato is soft and a fork slides in easily.
Meanwhile, de-vein garlic and place in a garlic press. Chop basil leaves into small bits. Grate the cheese if not pre-grated. Cut a large pat of butter (about 1 T).
When the potato is done, dice with a knife. Add butter and milk and smash with the fork. Add the basil and smash the garlic with the garlic press, repeating several times to get all the garlic juice out. Discard remaining garlic bits from press and mash garlic and basil into potatoes. Add cheese to taste or until potatoes start to cling together from the melting cheese.
Makes two small people servings or one big person serving.
