These are a healthier version of french fries but they are still delicious. You can cut down on the oil but they get a bit less crispy. Ingredients

    8 medium potatoes
    4 tbsp canola oil
    salt and pepper to taste

Directions

cut potatoes into 8 wedges and soak in warm water for about 30 minutes. Pour off water, drain and dry potatoes well. Pour 3 tbsp of oil on baking sheet spread over bottom, put the other tbsp in a large bowl. Add salt and pepper to bowl add potatoes, mix well to coat with oil. Put in 425 degree oven for about 40 - 50 minutes.
