    3 x Potatoes
    2 x Leeks
    2 x Vegetable stock cubes


peel and chop 3 medium sized potatoes and add to a large pan of water.

Slice 2 leeks (thickness of slices is down to personal preference) and add these to the same pan.

Bring to the boil then reduce the heat and leave to simmer until potatoes are cooked

Using 2 vegetable stock cubes make up 1pint of stock.

Drain the potatoes and leeks and stir in the stock. The potatoes should mash down a bit when adding the stock to make a thicker soup.

Add seasoning and serve.
