Ingredients

1 tbsp butter or margarine
2 tbsp canola oil
3 garlic cloves
2 pounds medium mushrooms
3 tbsp lemon juice
dash black pepper
dash salt
250 mL whipping cream
10 oz package fresh spinach
8 cups cooked fettuccini
Directions
Bring medium pot of water to boil. Toss in spinach and cook according to package instructions (about 6 minutes), drain and set aside.
Slice mushrooms thin and set aside.
Peel and crush garlic.
Bring a medium pot of water to boil. Cook fettuccini according to package instructions. Drain and set aside.
Heat canola oil and butter in a large pot over medium heat. Add the garlic and cook, stirring frequently, for 1 minute.
Add the mushrooms and cook, stirring occasionally, for 2-4 minutes.
Add the lemon juice, black pepper, salt, and whipping cream. Stir again. Set aside.
Chop cooked spinach finely and stir into mushroom mixture. Add cooked fettuccini. Stir until coated.
Ready to serve. Makes 8 1-cup servings.
