Introduction

Hearty soup of curly endive with pieces of white chicken and garbanzo beans Hearty soup of curly endive with pieces of white chicken and garbanzo beans
Number of Servings: 4

Ingredients

    one head of curly endive
    one chopped onion
    one small can of stewed tomatoes
    two cloves garlic
    half a cup of garbanzo beans
    6 oz of chicken breast

Directions

cut up onion and saute in a little olive oil
add cup up curly endive and cover to steam. I usually wash the endive, and leave it wet.
add the tomatoes, garlic, cut up chicken, and add a qt of water
I didn't use stock, but you can use either veggie stock or chicken.
cook for about 20 to 30 min. serve with a good shaved Italian cheese.
