Introduction

Ingredients

    About .5 cup red bell pepper chopped into about 1" pieces
    3 medium/large mushrooms, sliced
    .25 cup red onion chopped into large pieces
    .5 Cup diced fresh pineapple
    1 cup instant brown rice
    About .5 chicken breast shredded from rotisserie chicken
    roughly 2 tbsp Extra Virgin Olive Oil

Directions

Cook rice according to instructions and set aside. Heat Olive Oil in pan on low and add onions. Let cook until they start to become soft and add mushrooms and red peppers. Stir to coat with olive oil and let cook for a couple of minutes. Add Pineapple and cook until mushrooms look cooked and peppers are soft. Add Chicken and Sweet Chili Thai Sauce. Stir to coat chicken and veggies with sauce. Cook until chicken is heated up. Put half of rice in dish and half of stir-fry mix over the top! Makes 2 servings.
