Introduction

Ingredients

    3 Cups of Cooked Elbow Macaroni rinsed and cooled
    1/4 c chopped red onion
    1/4 c green pepper
    1/3 c Kraft Reduced Fat Mayo w/olive oil
    1 celery stalk chopped
    1/2 c Matchstick carrots (chopped to make smaller)
    1 tsp sugar
    1 tbs French's Honey Mustard
    1/3 c Yoplait plain fat free Greek yogurt
    1/4 tsp salt
    pepper to taste

Directions

Cook, drain and cool pasta. Add chopped vegetables (celery, onion, carrots, and green pepper). Add mayo, mustard, and Greek Yogurt. Sprinkle sugar, salt and pepper (if desired). Stir all ingredients until evenly coated.

Chill for 30 minutes and serve.

*Using Greek yogurt adds protein while cutting down the fat.**

    I've never made homemade macaroni salad before. I made this Friday night to take to a family cookout on Sat and it was a huge hit. Everyone made sure to grab a container of their own to take home as well. Excellent!!! - 7/4/10
