A good vegetable extender for many meals. Uses include taco topping instead of cheese, adding to migas for breakfast, topping baked potatoes. The variations and uses are endless. Enjoy! Ingredients

    3 large bell peppers: red, yellow, orange, diced
    two large shallots, sliced thin
    one medium sweet yellow onion, sliced thin
    4 fat cloves of garlic sliced thin
    one tablespoon of EVOO

Directions

Very easy. Makes 8, half-cup servings.
saute' the peppers, onions, shallots and garlic in the EVOO to desired doneness. I toss the onions and shallots in first and then the peppers and last the garlic as I like the onions and shallots very wilted and the sugars beginning to caramelize but the peppers still firm and sweet with the garlic done just to a buttery softness.
A dash of salt and pepper if appropriate for whatever you'll use this with.
