Ingredients

1 Butternut or Spagetti Squash aprox. 1 lb.
2 teaspoons olive oil
1/2 cup diced onions
1/2 cup sweet red peppers diced
1/2 cup green peppers diced
1/2 cup yellow peppers diced
1/2 cup orange peppers diced
3 cloves fresh garlic minced
6 oz. fresh lean ground turkey
2 cups fresh baby spinach
1 teaspoon dried oregano
Dash of salt
Dash of black pepper
1/2 teaspoon Italian Seasoning Mix
2 slices Rice Cheese Mozzarella flavor
1 tablespoon Fresh Sweet Basil, chopped
1 tablespoon Fresh Italian Parsley, chopped
Directions
Serving Size 1 cup
1. Preheat Oven to 400 degrees Farenheit
2. Pierce squash with a fork in several places and place whole squash on a baking sheet and bake for 45 min.
3. Remove from oven and reduce oven temp. to 350 degrees Farenheit.
4. Cut Squash in half lengthwise and remove and discar seeds and scoop out pulp saving the shells
5. In a fry pan heat oil, add onion, peppersand garlic and saute until onion is translucent. Stir in ground turkey and saute until no longer pink.
6 Add pulp and seasonings stirring until liquid has been absorbed. Divide mixture in half and place back in shells in individual baking dishes and bake for 20 minutes. Add cheese sprinkle with parsley and heat just till cheese melts.
