Introduction
Found this in a book ' the food of morocco' We all thought it tasted amazing! My kids loved it, and I thought it would even work well without any meat. The fresh mint really adds a great kick to it. Ingredients
-
*3 lbs Chicken Breast, no skin, 48 ounces
* Olive Oil, 2 tbsp
* Onions, raw, 3 medium
* *Cumin seed, 1 tsp
* Paprika, .5 tsp
* Pepper, red or cayenne, .5 tsp
* Red Ripe Tomatoes, 2 plum tomato
* Tomato Paste, 0.062 cup
* *cinnamon stick, 1 serving
* Couscous, .5 cup, dry, yields
* Parsley, 2 tbsp
* Cilantro, raw, 1 tbsp
* Peppermint, fresh, 2 tbsp
Directions
-Cut up chicken into cubes.
-put oil in pan and heat then add chicken.
-once the chicken has browned add sliced onions and 4 cups water.
-add your cumin, paprika and cayenne pepper bring pot to a boil.
-peal your tomatoes and chop them up. Add the tomatoes to the pot, your tomato paste, and your cinnamon stick. Season to your liking (salt and pepper). Bring to a boil, and then reduce heat to low. Cover and allow to simmer for 1 hour, or until chicken is very tender.
-If you want you can take the chicken out and shred it then return to the pot. Add 2 cups of water and bring the pot up to boil, add the couscous, and your chopped up herbs. Allow to simmer for an additional 20 min.
We did 1 cup per serving, and ended up with about 8.
