Ingredients

1 cup whole white wheat flour
1/2 tbsp baking powder
1/2 tbsp cinnamon
1 1/4 cups vanilla soy milk
1/2 tbsp vegetable oil
1/2 tsp vanilla
1/2 ripe banana, mashed
Directions
Mix flour, baking powder and cinnamon together in a large bowl. In a separate bowl, mix soy milk, vegetable oil and vanilla and whip with a fork for 1 minute. Pour this mixture into the flour mixture and add banana. Stir to combine, don't worry about lumps.
Preheat a medium skillet. Using a large serving spoon or ladle, drop a spoonful of batter into the skillet. Cook until the pancake begins to bubble, about 2-3 minutes. Turn with a spatula and cook until the underside is lightly browned.
This recipe makes about 7 three inch pancakes with medium thickness. If you like thinner or thicker pancakes, feel free to add more or less soy milk. Also, I used Haitian vanilla, which is stronger than store bought vanilla, so you may need to add a full teaspoon.
