Introduction

1.5 gallons of water. Boil lobster bodies and shells to get half a pound of lobster yield and a gallon of liquid. ( I used 7 bodies). Cube Potatoes & dice onions, & cook 3 minutes in microwave. Add cubed fish and evap milk. Salt & pepper. Simmer for 1/2 hour. Yields 18 cups 1.5 gallons of water. Boil lobster bodies and shells to get half a pound of lobster yield and a gallon of liquid. Ingredients

    Boil lobster shells and bodies in a large stock pot. (remove blackish sack from behind eyes 2"x 1") Everything else goes into the pot. Boil to reduce by 1/3 and to extract the lobster. & bodies yields about 1/2 cup of meat. It will be part of the broth. Strain out all solids. cut up potato & onion and precook in the microwave to soften. (shortens cooking time). Combine broth, milk, potato and onion with 1/4 cu of potato flour for thickening. (make a roux) Cook for 1/2 hour and serve. Salt & pepper to taste.
