Ingredients

3 oz. Tri-Color Rotini (Barilla)
1 oz. Hormel Pepperoni Minis (Could use Turkey for less fat but more salt0
1 oz. Grated Parmesan Cheese
1 Pint Grape Tomatoes (Can use Cherry or regular chopped)
1 Bunch Green Onions, sliced
1/2 Pkg. Good Seasons Italian Dressing Mix
1/8 cup White Vinegar
1/8 cup Canola Oil
Fresh Ground Pepper
Directions
Boil pasta as directed on box, drain and rinse with cold water to cool. While pasta is boiling, clean and slice scallions using as much of the green tops as desired and prepare Italian dressing as directed on package using the less oil method, set aside.
Add pasta to bowl, then add tomatoes, pepperoni and onions. Add half the prepared Italian Dressing or to taste. Mix. Add cheese and pepper, mix.
Refrigerate at least 2 hours, but this is best served after marinating overnight. For spicier versions or different tastes, other light or vinaigrette dressings should work fine.
This recipe serves 4, but can be doubled or even tripled for large parties.
