Ingredients

1 loaf Aunt Millies 5 grain Fiber for Life Bread (17 slices, cubed)
1 Cup Skim Milk
1 Cup Fat Free Half & Half
1 Cup Fat Free Cottage Cheese
1 1/2 Cups Egg Substitute
1/2 Cup Maple Syrup
2 tsp. Vanilla
2 tsp. Cinnamon
1 tsp. Ginger
1 tsp. Nutmeg
1 Lemon, zested
2 Cans Crushed Pineapple
Directions
Wisk together all ingredients except Cottage Cheese, Pineapple & Bread. Add Cottage Cheese & Pineapple (including juice) and mix well. Add bread cubes and soak for 2 hours in frig (stir occasionally). Bake at 350 degrees for 90 minutes.
