Ingredients

    Zucchini, 2 cup, sliced (remove)
    *Summer Squash, 2 cup, sliced (remove)
    Carrots, raw, 2 cup, chopped (remove)
    Onions, raw, 1 cup, chopped (remove)
    Olive Oil, 2 tbsp (remove)
    Pepper, black, 1 tbsp (remove)
    *Italian Herb Seasoning mix, 2 tsp (remove)
    Salt, 1 tsp (remove)

Directions

If you have a small holed grilling basket pre heat it on the grill, if not cut up your vegetables into larger pieces. they can also be cooked in a grill pan on the stove, preheat on high medium. Cut up carrots first and put in a gallon bread bag, put 1/2 a tbsp olive oil pinch of salt, seasoning, pepper in bag. Close the bag and shake to evenly coat all of the carrots with oil and seasoning. When evenly coated, dump carrots into the hot basket or pan. They take longer to cook then the other vegetables. Chop up the rest of the vegetables in a rough style and throw the rest of the ingredients in the bag to be shaken up just like the carrots. When everything is evenly coated the dump it in with the carrots and stir. Cook until desired doneness, stirring occasionally to allow all of the vegetables a chance at the bottom. Vegetables should be slightly caramellized on the outside, but still slightly crunchy insside. Play with it until it's the way you like it.
