Introduction

Great breakfast if paired with a hard-boiled egg white or a glass of skim milk for protein. Keeps you full with the fat. Some may choose to sub out the oil for applesauce, but I'd rather have the healthy oil and the sustainability! No added sugar. Ingredients

    1/2 c. old-fashioned oats
    1/4 c. ground flax seed
    3/4 c. whole wheat flour
    1 tsp baking soda
    1/4 tsp salt
    3 medium bananas, mashed
    1/8 c. extra virgin olive oil
    1/2 c milk
    .75 tsp vanilla extract

Directions

Mix dry ingredients, mix. Mash bananas with fork. Add bananas and remainder of ingredients. Place in to muffin papers. Bake at 350 degrees for 15-20 minutes, or until toothpick comes out clean when stuck in the middle of a muffin.
Makes 6 Large Muffins.
Freeze, and grab for a quick breakfast!
