Introduction

Ingredients

    2/3 cup vinegar (cider or wine)
    1/3 cup water
    4 tbsp. sugar or honey
    1 tsp. salt
    1/2 cup thinly sliced onion
    4 medium cucumbers, peeled and thinly sliced
    fresh black pepper to taste
    2 tbsp fresh minced dill or 2 tsp. dried

Directions

1. Combine vinegar, water, sugar, and salt in a small saucepan. Heat to boiling, then remove from heat.
2. Place onion and cucumber in a medium bowl, add the hot liquid. Cool to room temperature; add pepper and dill.
3. Let sit overnight. Will keep for at least two weeks in the refrigerator, if it lasts that long.
