Ingredients

    1/2 cup finely chopped raw onion
    4 tbsp margarine
    1/4 Tsp. cracked black peppercorn
    1 sprig fresh thyme
    1/2 cup red wine
    2 fillet Mignon or other beef steaks (6 oz each)
    3/4 cup low sodium beef broth
    1/4 cup tomato puree

Directions

Melt margarine in a sauce pan and saute onion for approx. 2 minutes (until transparent). Add red wine and reduce for approx. 2-3 minutes (to an essence). Add thyme and peppercorns and reduce further for approx. 2-3 minutes (until almost no liquid remains).

Add broth and tomato puree and simmer for approx. 5-6 minutes (until sauce begins to thicken).

Serve over fillet Mignon, tournedo, beef tenderloin steaks, or rump steaks.
