Ingredients

1 cup all purpose flour
1 cup yellow corn meal
3 teaspoons baking powder
1/2 teaspoons salt
1/4 teaspoon baking soda
1 cup buttermilk
3 tablespoons olive oil
1/4 cup pickled Jalapenos chopped
2 tablespoons olive oil (for skillet)
Directions
Heat oven to 425 degrees F.
Put 10-inch cast iron skillet in oven to get hot.
Mix dry ingredients together well. Mix together wet ingredients. Add the wet ingredients with the dry ingredients just until mixed. Do not over mix.
Take hot skillet from oven, add the olive oil. Add the cornbread mixture and return to oven.
Bake for 25 to 30 minutes or until a crispy brown.
