Ingredients

* *Barilla Whole Wheat Elbows, 1 Box
*****************************************************************
* * 1.5 tbsp Italian seasoning
* * 1.5 tbsp Olive oil
* * salt (as needed per desired taste)
*****************************************************************
* * 2/3 cup yellow squash, small slices
* * 2/3 cup zuchinni, small slices
* *1/3 cup medium yellow onion, chopped
* * 2 tbsp shallots, chopped
* * 1/2 stalk, medium sized celery, chopped
* * Baby Spinach (1.5 cup recommended but any amount
is okay)
* * 3 cloves garlic, minced or finely chopped
* * 2/3 cup of mushrooms, chopped

* * 1/2 can Bush's Seasoned Black Beans
* * 3/4 - 1 cup Ragu Alfredo Sauce (Light)

* * Kraft Italian 5 cheese blend (optional)
Directions
Follow normal cooking directions to your whole grain pasta: typically boiling water then adding pasta. Cook 10 minutes, add an additional minute for more tender pasta. Stir frequently so it does not stick.
The rest is easy:
1. Prepare your onion family first, chop up 1/2 of a medium sized yellow onion (approx 1/3 cup), chop one small/medium shallot (approx 2 -3 tbsp), and chop finely 3 - 4 cloves of garlic.
2. Add 1.5 tbsp of olive oil in cooking or saute pan.
3. Chop up 1/2 medium celery stalk (putting too much will alter the flavor)
4. Add garlic, onions, and shallots to pan and saute medium for about 4 - 5 minutes or until tender
*add celery approx 3 - 4 minutes
add italian seasoning
5. (you can do this step before or while other ingredients are cooking) cut into small slices 2/3 yellow squash and also 2/3 zucchini.
6. After 4-5 minutes, add the squash and zucchini
7. Add mushrooms
8. Add baby spinach - Sautee to desired tenderness
9. Drain canned black beans and add 1/2 can to vegetables
10. Immediately add Alfredo sauce.
Cook until beans and Alfredo sauce are fully heated.
Serve pasta by serving size and add Alfredo, black bean and veggie mix.
Optional for added taste: Italian 5 cheese blend
salt to taste
