Introduction

I didn't figure tortillas into the calorie count, so that you can choose whether to use corn, flour, or whole wheat. This is from the book "Lean, Luscious and Meatless," but I used lime juice instead of orange juice, as the authors suggested. Ingredients

    1 lb firm tofu, cut into matchsticks
    1 1/2 cups onion, thinly sliced
    1 1/2 cups green pepper, thinly sliced (calorie count figured for bells)
    1 4-oz. can chopped green chilies, undrained
    1/2 cup lime juice
    1 Tb olive oil
    2 Tb vinegar
    3 cloves garlic, finely chopped
    1 tsp ground cumin
    1 tsp ground coriander
    1 tsp dried oregano

Directions

Place tofu, onions, and green pepper in 9 x 13 pan. In a small bowl, combine remaining ingredients, mixing well. Pour over tofu mixture.

Cover pan and marinate 4 or 5 hours, stirring occasionally.

Wrap tortillas in aluminum foil and heat in a 350 degree oven for 10 minutes.

Heat a large nonstick skillet over medium-high heat. Drain tofu mixture (reserving marinade) and place in skillet. Cook, stirring gently, until vegetables are slightly tender. Add marinade, a little at a time to keep mixture from sticking.

To serve, spoon filling into the center of heated tortillas, roll and enjoy (don't forget to add tortillas to your calorie count!

    This is tasty but a few things are off - at least for me anyway. I found that to marinate everything properly, everything should be put into a zip lock baggie--so much easier...also 1 recipe of marinade is really not enough - I doubled it and it was perfect. - 4/11/13

    Incredible!
    This is quite possibly the best tofu recipe I have ever tried. My husband and I simply loved it. It would be a great way to introduce tofu to the non-believers. - 7/12/10

    It is indeed delicious, but I forgot to mention I also either cut way down on the vinegar, or leave it out depending on my mood. Too much of it would be a bit weird in a Mexican recipe. Hope you enjoy it!
