Introduction

This is a quick and easy salad that works well for a picnic. Everyone that has tried it really loves it, especially my husband. This is a quick and easy salad that works well for a picnic. Everyone that has tried it really loves it, especially my husband.
Number of Servings: 16

Ingredients

    1 Can blackeye peas
    1 Can chickpeas
    1 Can Mexican style corn
    1 Can black beans
    1 1/2 cups of cherry tomatoes or 2 med regular tomatoes
    1/2 cup chopped fresh cilantro
    1/8 t. ground cumin
    juice from 2 limes
    1/2 cup of Fat Free Zesty Italian dressing
    2 T. dried onion flakes
    salt & pepper to taste

Directions

Drain and rinse beans and peas. Drain corn. Cut cherry tomatoes in half or dice regular tomatoes. Chop cilantro. Mix all ingredients together and chill for several hours.

    Incredible!
    I made mine with some plum tomato and cucumber with more seasonings, and had to sub the blackeye peas wuth cannelini beans. This is so good! I love it and will keep this as a regular item in my diet. Next time I will take the time to soak and cook dry beans for this as I must reduce my sodium intakg - 7/3/10
