Nutrition & Calorie Comments  

I made mine with some plum tomato and cucumber with more seasonings, and had to sub the blackeye peas wuth cannelini beans. This is so good! I love it and will keep this as a regular item in my diet. Next time I will take the time to soak and cook dry beans for this as I must reduce my sodium intakg
I made this as a main course as a filler for lettuce wraps. I added a can of green chilies and some red pepper flakes for some spice. Fat free sour cream and fresh salsa rounded it out nicely.
