Cream Of Zucchini Recipes

Everyone will love these tasty dessert bars. No one will know they are hiding healthy zucchini inside!

This is a delicious raw soup that delivers a nutritional punch.

I made this recipe today (and tweeked it a little) from "Alive in 5: Raw Gourmet Meals in Five Minutes" by Angela Elliott. I liked the flavor; although, since I have been doing a basic raw diet for the last week, the addition of garlic was WAY too much for my palate. I think it would be best to add the "flavorings" a little at a time - - until you have the taste that works for you.
If you are not raw, this will probably taste like a bland version of Guacamole.

I've been making this for over 20 years. My family LOVES it. I used fresh zucchini and carrots from our garden. It's a definite favorite item in our family. It's NOT diet, but the vegetables are good for you! You can modify to be healthier.

This "pasta" dish is so light and yet rich--you'll never guess the "cream" is made from sunflower seeds. The white beans add buttery flavor and protein. Make this when the garden overflows with tomatoes, basil and zucchini.

Quick, weeknight pizza

Just veggies & broth - no dairy to make this a creamy soup! Mmmmmm!

Zucchini, 2 cup, sliced (remove)
Mushrooms, fresh, 1 cup, pieces or slices (remove)
Garlic powder, 1 tbsp (remove)
Water, tap, 1 cup (8 fl oz) (remove)
