Introduction

The ingredients to these pancakes may seem strange together but everyone including my extremely picky teenage daughter loves this recipe. One to keep on hand... enjoy! Number of Servings: 15

Ingredients

    6 eggs
    2 cups quick cooking oats
    2 cups 2 % cottage cheese
    3 teaspoons splenda/sugar baking blend
    2 teaspoons cinnamon
    2 teaspoons vanilla extract

Directions

Place all ingredients in blender and mix until smooth.

Heat griddle over medium heat and spray with non stick cooking spray.

Pour 1/4 cup batter onto heated griddle, flip pancake when batter starts to bubble.

Cook until golden brown.

To cook berry topping mix 1 c. blueberries and 1 c. sliced strawberries with 2 pkt splenda in a microwavable bowl. Cook in microwave for 2-3 minutes

Spooned over pancake (about 1 tablespoon per pancake) and a sprinkle of chopped walnuts.

Makes about 12 - 15 pancakes.
