Ingredients

    1 Box Rotini cooked al dente
    8-10 Kalamata olives sliced thin
    1 Bunch fresh spinach washed and sliced into strips
    3 Vine ripened tomatoes chopped
    1 shallot finely chopped
    10 Basil leaves sliced thin
    1 oz. Feta cheese
    2 T brown mustard
    3 T red wine vinegar
    1/4 c olive oil

Directions

Mix together the mustard and the red wine. When combined slowly add the olive oil until incorporated. Mix together all other ingredients and top with dressing.
