Ingredients

1 26 oz jar marinara sauce, divided
1 tsp olive oil
1 cup finely chopped onion
1/2 cup red bell pepper
1 cup hot italian turkey sausage
1 cup chopped mushrooms
1/2 cup chopped zucchini
2 garlic cloves, minced
1 (16 oz) tube of polenta, cut into 18 slices
1 cup (4 oz) pre shredded part-skim mozzarella cheese
Directions
Preheat oven to 350F
Spoon 1/2 cup marinara sauce in 8-inch square baking dish to cover bottom; set aside
Heat oil in large non stick skillet over medium high heat. Add onion and bell pepper, saute 4 minutes or until tender. Add turkey sausage, cook 4 minutes or until sausage is browned. Add mushrooms, zucchini, and garlic, saute until mushrooms are tender, stirring frequently. Add remaining marinara sauce; reduce heat and simmer 10 minutes.
Arrange 9 polenta slices over marinara sauce in bottom of baking dish. Top evenly with 1/2 of vegetable, sausage, sauce mixture. Top with 1/2 cup of mozzarella cheese. Layer remaining polenta over cheese; top with remaining vegetable, sausage, and sauce mixture and top with remaining 1/2 cup cheese.
Cover and bake 30 minutes at 350F. Uncover and bake an additional 15 minutes or until bubbly. Let set 10 minutes before serving.
