Ingredients

    2 Poblano peppers
    1-2 chicken breasts depending on servings wanted
    10 cherry tomatoes- diced
    1 small onion: diced
    1 serrano pepper: diced and deseeded. Depending on spice you want
    1-2 anaheim peppers: depending on spice you want. I used a mexican pepper but these could be used
    1/2 cup black beans
    1 corn on the cob
    2 wedges of laughing cow cheese. I used garlic/herb low fat
    Mrs. Dash spicey spice
    salt

Directions

I put the 2 chicken breasts to grill with a little salt and Mrs. Dash spice. Also start grilling the corn on the cob. While that is grilling, I diced up the remaining ingredients into a bowl. When the chicken was done, I diced it up small and put in bowl along with the corn on the cob that was grilled. Mix everything well.

Cut the peppers in 1/2. Take out ribs and seeds. Stuff with chicken mixture. Remaining mixture can be put in aluminum foil and cooked also. Put peppers on for 20 minutes or so until the start to turn dark and get soft. Serve hot. You can serve the leftovers with corn tortillas also. It would make a good taco!!!
