Ingredients

    5 whole chicken breasts cubed
    2 green peppers seeded then jullianed
    celery stalks chopped
    2 cans no salt added corn
    1 can fire roasted tomatoes
    1 can chopped tomatoes
    2 summer squash cubed
    1 medium onion jullianed
    6 cups cooked rice

Directions

place green peppers and onions on the bottom of the crockpot
add chicken, then squash and celery
add canned corn, tomatoes, fire roasted tomatoes, and chicken broth.

cook on high for 4 hours or until chicken is cooked through.

cook rice separately then add to cooked soup
