Introduction

Good little snack or breakfast for all phases.

For phase 2 & 3 you can add about 1 tsp of old fashion oats to the muffin cup for a nice chewy texture almost like potatoes.

Ingredients

    Ingredients:
    Egg, fresh, 12 large
    Parmesan Cheese, grated, 12 tbsp
    Spinach, fresh, 3 cup
    *Marinated Articoke Hearts, 6 oz
    Milk, nonfat, .5 cup
    Cheddar or Colby Cheese, Low Fat, 1 cup, shredded

Directions

Preheat oven to 350

Finely chop spinach

Rough chop drained articoke hearts

Whip eggs and milk until well combined

Into Muffin pans place 12 paper liners, spray the pan and liners with nonstick spray.

Into the liner cups place the parm, shredded cheese, articoke hearts & spinach.

Slowly pour the egg mixture over the filled cups, allow egg to settle, repeat process until uniformly filled.

Bake 30 min or until the "muffins" have puffed up and are slighty golden brown.

Cool completely then freeze or refrigerate

Micro the frozen "muffins" for 1 minute to serve
